Playing with eggplant...
There has been a lot of cheap eggplant in the store lately, and very reasonably priced fresh artichokes. Came up with this: ~sourdough bread smeared with tomato paste and olive oil ~artichoke hearts (I cut these in half, bake them in the oven, remove the fuzzy bits, then scrape the leaves in the usual way, and use the hearts for this sandwich.) ~slab of eggplant, baked whole (pierce or cut so it doesn't explode in the oven I recommend adding cheese if you like it... feta would be good, or swiss...
