Nothing beats beets!

At the grocery store the other day, I found some organic yellow beets tied 3 to a bundle, regardless of their individual sizes. I bought the three largest ones and took them home, and roasted them whole. When I say large, I'm talking about 4 inches across. It took quite a while to roast them at 350... I tried something on an impulse the other day. I heated up Progresso's chunky tomato soup, added Trader Joe's frozen seafood bits--shrimp, scallops, squid--and then stirred in a packet of couscous.
