First, I fried up the onions and peppers with some pieces of portobello caps, and then put them in a dish. Next, two eggs went into the very hot pan, yolks broken and spreading out: the pan is small, so it makes a nice circle on which to dump the vegies. Then, the circle of goodness goes on top of a very soft flour tortilla, and the entire thing is rolled into a burrito sorta thing, tucked up at one end to catch drippage.
