Recipe: Pickled Watermelon Rind

It has been ages since I found pickled watermelon rind in stores, but this recipe turned up the other day, and sometime this summer I will have to give it a try. Anyone else also like this tasty garnish for chicken or turkey? I used to slice it thin to put on sandwiches, too.
