Frittata

One of the best memories of New Zealand is the beautiful, artful breakfast frittata. If you've never had one, it is like a cross between a quiche and muffin. It is eggs and breadcrumbs baked around vegetables, and other savory things: bacon, sausage, chunks of cheese... Salmon is good, too. Of course these things can all be simply thrown scrambled together into an oven-proof dish and baked a while. But that isn't how they do it in New Zealand.
