Potato Cakes

Here is a little tip for left over potatoes: Potato Cakes Stir together 1 egg, 1/3 C. dry breadcrumbs, and a pinch of your favorite dry herbs into every 1 C. of potatoes. Shape into patties, coat in breadcrumbs and saute' in a little oil until crisp and golden. Sign in to see full entry.
