Getting exotic

I was in the neighborhood, so stopped in at the Asia Pacific Market the other day, and bought a few things... Besides the beautiful vegetables pretty familiar in Asian cookery, the Market carries many things I haven't a clue what to do with. This trip, I stayed pretty much with things I have used... Cooking without recipes

When my mom, a gourmet cook, wanted to make a new dish, she began by consulting several of her many, many cookbooks. She'd compare the versions of the recipes, then close the books, and head for the kitchen. It has been said that baking requires careful attention to the recipe, but other cooking... Speaking of oats...

Yesterday I mentioned one of my favorite breakfasts: steel-cut oats! I use McCann's quick-cooking oats by choice. They cost more, but are the best to my taste. The Irish know how to oat! I prepare them with about two cups of water and a little less than half a cup of oats. They go into the boiling... Sign in to see full entry.

New Year's Dinner, postponed...

Only until tomorrow, as Charlie has stuff on for tonight, and we'd have only an hour between his busy-nesses to enjoy it together. I'm gonna roast a chicken, filling it and surrounding it with little fingerling potatoes, and making some Stovetop cornbread stuffing. Broccoli, to add a flash of green,... Don't throw away those vegie butts!

https://flic.kr/ps/rhS1C This is the beginning of my garden of kitchen-trimmings. A couple of the celery butts I claimed from the guy in the grocery store prepping the stalks. He had no idea of their potential, and had no problem with me taking them off his cart. Basically, anything with roots, even... Sign in to see full entry.

To Feast or Not To Feast

The kitchen is full. After today's shopping expedition, wherein I took full advantage of the many sales of holiday feastery, the fridge has in it spiral-cut ham (half price sale), two boneless lamb shanks to join the frozen chicken mentioned in a previous post. (Charley lamented that we did not also... Sign in to see full entry.

First meal of the day

Talking about Italian sausage sandwiches the other day... Well, one thing leads to another, and today I fried up some peppers and sweet onion, and some chicken Italian sausage with herbs and tomato paste, and stuffed it into a big fat bakery bun. I always pinch out most of the soft bread in the... Sign in to see full entry.

Youvarlaika: Greek meatballs in lemon sauce

I found a few pages of recipes that I put in a notebook nearly 50 years ago. One of them I am particularly delighted to find: Greek lamb meatballs in a creamy lemon sauce. Here it is, if you want to try it: Mix thoroughly and shape into walnut-sized balls: 1 lb very lean ground lamb 1 medium onion... Sign in to see full entry.

New in the kitchen

I suppose this goes here... I bought some ceramics from a potter named Karlan Emery. These were on offer online through a potters co-op in the Denver area, https://www.facebook.com/arapahoeceramicsguild/photos/?tab=album&ref= I encourage shopping with local artists. These are people who make most of... Sign in to see full entry.

Ahhh...

...that first sip of fresh coffee! I use the simplest of drip systems, just grounds in a filter in a filter-holder, that drips into a little pitcher. According to a meme on facebook, this coffee-making strategy indicates that I am essentially an anarchist. Maybe so, in the making of coffee, but not... Sign in to see full entry.
