The night after the feasting, comes the clean-up and the put-away. Clean-up is pretty straightforward and not too bad if there's a dishwasher on hand. Putting-away is another thing: finding enough containers with properly fitting lids. This year we solve that problem in a new way, for us. I save all... Sign in to see full entry.

Feast Time!
It won't be Thanksgiving without _____________! Every year we seem to slip further away from our traditional feast foods. Some are simply too far off dietary restrictions, some we actually never liked that much, but they were expected. The older I get, the less enthusiastic I am, too, about a day... Beets and bananas
Today I again got out the peelers my Seattle daughter sent me,and attacked the beets that have been languishing in the fridge for several days. Long enough for the leaves to wilt... So I've put them in water to see if they can be perked up. After straight peeling, I used the shredding peeler to make... Sign in to see full entry.

Red cabbage
Today I looked up some recipes for red cabbage. I was thinking of the excellent stuff I had at a German restaurant, and decided to give it a shot. As it turns out, there aren't that many where it isn't just a side dish of braised, or red cabbage slaw. There are variations on braised, such as one... Sign in to see full entry.

Nothing is garbage until you throw it away
My Seattle daughter sent me a set of fancy peelers for my birthday. My favorite is the one that juliennes carrots and other hard vegies. I like to make that lightly pickled carrot garnish that's used in some Asian cuisines, and this makes it so easy! I shred the carrots then let them bathe a while... Sign in to see full entry.

Another quickie in the kitchen...
So you are baking some nice thick pork chops, they will be ready in 20 minutes, and you just remembered how good fresh applesauce is with them--and you have no sauce, just one nice big apple. It takes too long to prepare traditional applesauce, cooking fresh down to mush. So--grate that apple into... Sign in to see full entry.

Aftermath of smokings
This past week, the smoked meats were in mostly too long, so ended up with hard outsides and dry insides. Among them were a couple of lamb shanks that were really not pleasant to eat in that condition. So, today, I put all the lamb pieces in a pot of water and started to slow simmer it. After a... Smokings and saucings
Tomorrow will be another smoker day! I have thawing in the fridge a couple of lamb shanks, some drum-sticks of the special chicken, and a whole young roasting chicken. Charlie is planning to also do some char siu pork. Having not looked past the outside of the smoker, I don't know how much in can... Sign in to see full entry.

Charlie takes up smoking
Since I was here, Charlie got himself donated a smoker, and last Thursday he fired it up for the first time and smoked two pork shoulders for around 8 hours. I declare a success with only one qualifier: There was not enough for 4 to really have enough. So come next Thursday, he'll be setting it up... Sign in to see full entry.

Corned Beef + Taters =
HASH! I made corned beef hash this morning, from baked potatoes and deli-sliced corned beef, and some onion powder. (I'd have used fresh sweet onion but Our Charlie doesn't like the texture of onions, and he might be having some of this.) I know some people add a dash of vinegar but I forgot when I...
