Baba ghanouj is a popular Mediterranean (several different nationalities make a version of it) dip made with a severely roasted eggplant, even burnt, to get a nice smokey flavor in it. The eggplant goop is mixed with tahini, stuff like peanut butter but made of sesame seeds. I often use hummus, though, which is chickpeas mashed to creaminess and mixed with tahini.
