Potato pancakes
I haven't made them in years... shredded Yukon gold taters, with a couple of eggs, a little flour, a dash of milk... garlic and onion powder because my son has an antipathy to the texture of onions. Slowly fried in a covered skillet, the taters cook through and the outside is crispy brown, not crispy black. Oh, I wish I'd thought to make some applesauce.... Oh--just a minute... *eyes apples... eyes grater...* yeah... 20 min later: shredded apples with cinnamon sugar and a little water, cooking... Sign in to see full entry.
