Over Abundance Of Kow Choi

I'm being showered with fresh cilantro, arugula (salad rocket), and fresh kow choi (Chinese chives) on a daily basis now from the garden of Son #2 in such quantity that I am trying things that I haven't tried before, as well as chopping and freezing for future use.
