Trimming the fat
I like fat. I like a little fat on my steaks, and more than a little on pork chops if they’re fried up well done. I also like bacon that isn’t exactly lean when it’s fried up nice and crispy, and even (shudder) that good ol’ Southern staple of fried fatback. But when it comes to blogging the fat...
