Eggplant again...

The eggplants at the grocery store lately have been looking pretty fresh and of moderate size, so I've been playing with a couple of recipes. One I've mentioned before, baba ghanouj, and another which is a more Italian sort of antipasto. Baba ghanouj is roasted eggplant mixed with sesame tahini,... Sign in to see full entry.

Same old grind... and new!

It's been sitting in the box for a while, but finally came out: the new coffee-bean grinder. This was because I had accidentally bought beans instead of ground coffee, but I only just now ran out of the previous ground supply. Before grinding the beans, though, I had another project: Mushrooms! I... Sign in to see full entry.

Corned Beef Hash

It's one of my breakfast favorites, done all nice and crispy, but sometimes it's hard to get it just right in the skillet. Today I solved that problem. My mom used to press it into pyrex dishes, crack the egg into the center, then bake them in the oven. I used my small cast iron skillet, set the... Sign in to see full entry.

Tagine cooking today

I've just put a chunk of lamb into the tagine with some onion and shitake mushrooms, and turned the heat on low. It's great having 4 working burners on the stove so this can be going on at the back of the stove, just in case I have a sudden notion to cook something else. Lunch was the last of the... Nothing beats beets!

At the grocery store the other day, I found some organic yellow beets tied 3 to a bundle, regardless of their individual sizes. I bought the three largest ones and took them home, and roasted them whole. When I say large, I'm talking about 4 inches across. It took quite a while to roast them at 350... Mu-Shu Frittata

Today was the day to clear another patch of the fridge, so breakfast involved the leftovers of the other evening's mu-shu delivery dinner. I added the remains of some canned chicken to the mu-shu, and while it heated in the skillet, I whipped up a couple of eggs and poured them into a small bowl.... Sign in to see full entry.

I miss-clicked and didn't notice until now... This post belongs here, not in the Universe blog! Yesterday we found crumpets at Trader Joe's. If you've never had them, they're worth giving a try. They are moister than English muffins but still have the little holes to collect butter and the sweetness... Sign in to see full entry.

Shortcuts with soups

I've mentioned before that I am a fan of soup, and some particular canned soups from Progresso and Campbell's Chunky. I like the chicken and corn chowder, for one, and some other chicken-based soups. But the trouble is, there's never much chicken in them. Recently I solved that problem. Now I buy... Sign in to see full entry.

Grocery shopping when way too tired

We stopped for groceries, just to get something for dinner... I went and picked out a little tray of store-made sushi--have a good little sushi kitchen at our store--but then had a few thoughts about tomorrow's meals, and in going to get a can of baked beans, ended up with pickled beets, sweet and... Something new!

I tried something on an impulse the other day. I heated up Progresso's chunky tomato soup, added Trader Joe's frozen seafood bits--shrimp, scallops, squid--and then stirred in a packet of couscous. Imagine Spanish rice but with wheat instead of rice. It was pretty satisfying, as last-minute impulses... Sign in to see full entry.
