Hmmmm - they do sound good! And since there's no real baking involved, I might even try this! Would they still be Lamingtons if you diluted the water with something suitable?

I might have to try this, and I am thinking, a two-layer design with some cherry jam between the layers, then chocolate all around--It will have to be dark because I like it better, and our ChiffChaff has eaten all the milk chocolate--then bounced in the bag with fresh toasted coconut... Would they still be lamingtons? Layered like that, would they be laminated lamingtons?

I myself have never had lamington. It does sound yummy...I like the idea of a lamington drive to raise funds. We do wrapping paper in the States, but everybody does it and so one sells little. I imagine people keep on buying lamington.

Re:
well there are no measurements from me cos i just throw stuff together. But A square butter cake is best. and the rest just comes together. Sometimes I have to make extra chocolate cause it didn't judge it right. Google has recipes.

I suppose if one half shuts on'e eyes and peeps through one's fingers they look like little lambs with their appendages cut off. I'll have mine made of millk chocolate, thanks for the recipe.

They sure sound good. Thank you for telling us how to make them. I'll bet they are a huge hit everywhere. Good idea about hiding them. My Gram used to hide the special stuff she baked. Yes, and I hate clean-up after also cause I make one unholy mess cooking...

omg I want to make them. I love to bake italian cookies at Christmas... maybe I could make these for Easter? Do you just use a box cake for the cake part? And how much sugar & cocoa for the icing?

I love it when you write about Australia. There was a time I would have made those for my family, but now, I would eat way too many of them even though not supposed to. So, I stick to fresh fruit when I want something sweet.
