I learned about fritatta down under... NZ and in Sydney, they cared so much about making food lovely, and the fritattas were just deliciously beautiful, especially with big chunks of golden pumpkin!

I love those crumb, crumb, crumbly recipes...
I buy the gluten free bread, which is double the cost of my favorite artisan crusty bread, my favorite but I dare not touch it artisan French bread... The crusts on this brand are too thick for the toaster, and I couldn't bear to just toss them so I crumbled them up and put them in a baggie, froze the crumbs until I had enough to use in a meat loaf. Along with onions and peppers - I was out of tomato sauce - I baked it in the crockpot. Yum.

It won't be flat if you pour the eggs all at once into very hot oil--not deep oil, but maybe 1/4 inch in the pan. If you are adding to it, ham or onions or cheese... any little tasty thing, I'd put it into the eggs before pouring them into the pan.

Just wondering how do you keep that amazing figure.
I eat two dry biscuits and put on two pounds.
It must be the eggs , as an ex poultry farmer, but suddenly I fancy a big
fluffy omelette, but I expect it will be flat.
