I watch a lot of those home renovation shows on HGTV and the DIY network,
and there are a lot of examples there of drywall going up over a wood ceiling, just to be fashionable. If there'd been a leak in the roof that wasn't patched, the drywall would also be stained. A damaged wood ceiling would probably have been removed, but as you've already noted - it's anybody's guess. It seems to be a "name your poison" situation. Be safe.
