We eat cabbage raw in cole slaw etc., mostly. We do boil them too. The dark greens are wonderful in full bodied flavors. I do not like Collards but the others I do.

We alway make sure we have green veg. Those that you have described are much better than ordinary cabbage I am sure. Thank you Justi

I like them all, though lately I've been using a fair bit of bok choy, which is easily steamed and can be prepared in many different ways...

Mother grew a mountain of Spinach with potoatoes , and when foor got
short she would cut and dig in the garden and with a bit of lamb we ate like the rich and famous.l

I did not know spinach grew wild anywhere, but of course, it would have too. I love it. Have you eaten Polk Greens?

As far as flavor goes, of those listed, turnip greens will always be my favorite. An added bonus is to peel and dice a small turnip and add it as it cooks and mix in a few blackeyed peas. And, might as well throw in a ham hock too...and serve up some cornbread. LOL

Growing up poor I learned to love all of these, and beet greens too. On the ranch spinach grew wild and was often the vegetable choice at dinner time.
