I think you are on the right path. But, also try to develop a thicker skin, then b.i.. like your manager won't get to you so much. It's her misery, not yours.

Don't worry about
apologies. If they're insincere they don't mean anything anyway. The point is you stood up for yourself and she was faced with a humiliating backdown!
She might think twice next time...
