Thanks for dropping in.
If you make a gazpacho like that i.e. a bit lumpy, serve it as soup, in a bowl with a spoon. Later on I shall post a recipe for a very thick version. See my reply to Rumored's comment for a dip.
You do have a spoon, do you?LOL

Spanish cucumbers have faintly spiky, tough skins, and masses of big seeds, but there are so many of them about that one can discard most of them, and just use the flesh.

love your recipies. Actually, I like mucking around the kitchen myself! So I thought I'd make a contribution.
I’ve been making a very refreshing, gazpacho-like (in that it is raw) cucumber soup, that you can add to your collection of recipes. It’s very simple:
1 English cucumber (less seedy than the others, although Merry Old England has become a little seedy herself, I’m afraid), chopped
1 green onion, chopped
1 handful of young spinach
1 handful of parsley (the flat variety, the krinkly kind is tasteless)
lots of fresh tarragon
1 clove garlic
1 good squeeze of lemon
pepper and salt to taste
1 cup buttermilk
1 cup chicken broth
Everything goes into the blender, and Bob's your uncle! It gets churned into a nice light soup whose green colour alone is refreshing on a hot summer’s day! Actually, I usually have a little cerushed ice at the bottom of the blender, before throwing in the other ingredients. And one can of course play variations on this theme!

Ariel, I tried the gazpacho, but I made the mistake of using the blender
because I don't have a food processor, just a blender and a juicer. It came out a little chunky, and a nice tomato juice, but I still used it as a dip for chips. Oh, well.
Bel's right. I'd love to see you do a cooking show. You'd beat Julia Childs any day! (note on vegetarians, yes, they do get fairly snippy and judgmental, don't they? There are Hunnish hordes of them here in the Pacific NW, and I avoid them like the plague. If they had there way, we'd all be dressed in hemp tunics and jute sandals, and eating lentils and soy. blech. I've never seen a healthy looking vegan in my life. Skinny and dyspeptic bunch, and humorless, too.)
