My cooking nightmare went like this...
Since I was at sea the previous Thanksgiving, I told my wife at midmight after she just put the turkey in the oven:  "No, no, don't be silly.  You did this all by yourself last year. Let ME set the clock for 5:00 and I'll get up and pull the bird out of the oven then.  You just sleep!"  Of course, when I woke up at 7:30, the turkey wasn't exactly juicy.  And, also OF COURSE, the house was full of my family who came from far away to join in the festive day (think of that scene in "Christmas Vacation" with Chevy Chase and you'll have a pretty good idea how dinner went!).

It was pretty fabulous not to have a fire here! But the turkey was wonderful.

Reality
The good news is that some deployments are being cut short.  Mine was orginally slotted for 18 months, then down to 12 "in country".  He will be home probably sometime next week (I can't even type that without grinning like a fool).  He will have about 11 months in country.  Yeah, I know what that means for the possibility of redeployment in the near future but for now it's all good!

I am hoping for him to make it home before next Thanksgiving, but I am not holding my breath for that one.

Love the pointer on the chicken broth... I bet that would make good gravy. YUM!

You turkey!
Well, with 21 lbs of turkey you're going to be having turkey noodle soup, turkey sandwiches, turkey salad, turkey A La King, turkey pot pies, turkey rollups, turkey chili, turkey stew, casserole, turkey gumbo, turkey scampi....lol

Reality

Hopefully next Thanksgiving your cook will be home.  I actually add chicken broth instead of water and use that to baste as well.  good stock for gravy.

My first turkey I knew nothing...I cooked it with the neck and giblet (still in the paper bag) inside.
