Leftover soup

My husband loves to make soup and he started making it every Monday for a group that we had meeting in our house. The group disbanded but Kurt kept making soup. This summer was quite hot and we had salads frequently. But now kurt is making soup again. He makes enough so that there are leftovers for... Sign in to see full entry.

Boil some eggs.

Boiled eggs take a little time, to boil and then peel. So when you have free time, boil some eggs, peel them and put them in a plastic container in the refrigerator. You can make egg salad sandwiches, just eat them with salt and pepper, make them into deviled eggs, mix them with tuna for tunday... Sign in to see full entry.

Chicken and Rice

This is a Spanish dish, Arroz con pollo, which is made throughout Latin America. It is quite mild and very tasty. I bake a chicken for two hours in the oven. Then drain the broth from the pan and put it into the freezer. I cut up the chicken, an onion, a red pepper and mushrooms. When the broth is... Sign in to see full entry.

Cooking for the Freezer

Two weeks ago I make two weeks worth of meals, so I've started doing it again. This time I had to buy all the food first since I cooked all the food in the refrigerator and the freezer. I don't know exactly how much food I will make. I bought four chickens, a large package of pork chops from Costco,... Sign in to see full entry.

Barbecue

isn't fast, but it requires a minimal amount of effort. Generally the kichen doesn't get very messy, so that helps too. We barbecue all year long, unless its rainy. Sign in to see full entry.

Question:What do you do with leftover rice?

Our family just lets it rot, but I'm sure that fried rice would be good. Any other ideas? Sign in to see full entry.

Even with all this preparation

we still went out to eat this weekend. I even ate fast food this weekend. When you come home from one trip, go to the market for the next day, to church, lunch and meeting, and then pack for the next trip, cooking is not on the schedule. Even sandwiches. I just don't have the energy to keep things... Sign in to see full entry.

Lazy Lunch

When I'm really lazy, I will put cheese on a tortilla and melt it in the microwave. Tortillas are good for a lot of things. Costco sells roll ups which are torillas covered with different fillings rolled up and sliced. They are very good. But a little time consuming. They might be a good thing to... Sandwiches

I don't know why, but our family rarely eats home made sandwiches. I will eat peanut butter sandwiches, plain bread and butter, grilled cheese and meat and cheese, with mayo and mustard. My husband will rarely eat them and my daughters only if that's all they have nothing else to eat. But sandwiches... Sign in to see full entry.

Dinner for a Friend

I promised a friend that I would fix her favorite meal if she'd finish writing up her moral inventory (the fourth step). She wanted lasagna. Among the fourteen meals I prepared was lasagna. So all I had to do on Sunday was to thaw it and cook it. We had salad already prepared in the refrigerator and... Sign in to see full entry.
