Noodles That Travel

This is soumen, boiled wheat noodles, eaten cold, by running cold water over them, dipped in a sauce before bringing to the mouth. They are summer food, guaranteed to be cold because they are sent down a bamboo chute in cold water. This process is called soumen nagashi, or flowing soumen. The noddle...
