Oregon's center is the key to their running game. He aims that snap to give the offense a directional momentum. If your nose tackle beats the crap out of his snapping arm, he will become less accurate over the duration of the game. Also, if you keep the center right where he is, they can't move him side to side. They can't "steal" a new blocking angle after the snap.
