Good morning
I always cook my scrambled eggs low and slow. Cooking eggs at a higher heat makes them rubbery. 🍳

Ciel....I would just....
....scramble the egg by itself and lay it on top of the nice warm corned beef hash....but then I'm just a lazy old cook.

I've not tried this recipe but it sounds good. I would put a dash of hot sauce on it. I love hot sauce.
