Spinach... I like a SE Asian dish called Showering Rama which is whatever protein--shrimp or chicken are what I've had, or tofu--on a bed of blanched spinach, with peanut sauce. I also like some Meditarranean spinach dishes, like spanikopita. Your spinach quiche sounds very interesting!

I also have to be in the mood for melon, and when I am, I like all sorts! Watermelon, when it is really sweet, is great! And I like pickled watermelon rind as a garnish on poultry or ham. Maybe it's the cloves...
If you freeze grapes, they are like little sherbet bites.
That salad sounds amazing!

I like beans! Not so much garbanzos, but I do like the big lima beans in a salad. I sometimes mix them and some other kind as well, into the baked beans. It helps cut the sweetness of the sauce, and adds interest. I haven't tried adding chunks of avocado yet, but it sounds interesting!

My carrots seeds never sprouted... I will have to re-do that tub! And I agree, the tiny ones straight out of the ground are delightful. I am trying the stubby ones that I had when visiting my daughter up in Lancashire--they were so sweet and nice, and that was just from the store.
I absent-mindedly set down my tasty ham sandwich on its plate with a carrot on the side, and when I came back to it, the dog had come and stolen... the carrot!

I am also a fan of beets! I will roast some of those with the carrots next time! Borscht...! I have heard that there are as many recipes for borscht as there are Russians.

I never eat a lot of meat either. I eat my veggies plain so i’d Have to look for a recipe. there is one I like, like a crustkess spinach quiche. Labor intensive though.You take care in that heat.

In this heat wave I've developed an unusual craving for watermelon.
I have never really liked watermelon much - preferred cantelopes, grapes, strawberries as my summer cool nibbles. And I made an apple salad using my food processor this morning, an apple, some pecans, dried cranberries, a couple maraschino charries, mixed up with a blurb of honey/mayonnaise with a dash of cinnamon. It is also delicious with a bit of cauliflower, some celery, maybe some carrot.

One of my favorite things to roast like that is beets. I peel them and cut them in chunks, rub them with EVOO and bake. They turn out so good. But with the heat we are having, I am not baking. Now I'm eating beets I boiled and pickled.
