I spoke with the person in charge of the project earlier today and told them that due to their 'impossible to meet' demands that were not made clear to me when this project was initially laid out to me, that I was 'washing my hands of the situation.'
Obviously they were not happy but then again, they figured out that not laying all of their cards out on the table, they had made me unhappy. I gave them a screen-shot of our original agreement and one of the demands that they had begun to give me and asked them to find "Demand K, L, M, & N" in the original document. Then they understood.
They offered me more money, but I explained that I had found them uncomfortable to work with and that I was not going to subject myself to their nonsense. I did hook them up with some one who obviously needed the money more than did I and they agreed to pick it up from where I left off. I left the conversation at that point.
It pays to make, get, and keep letters of agreement.

You don't want stress , you have been ill and made a good recovery. You help people sometimes it is taken for granted. Sometimes it probably is very helpful.

I don't blame you...I had organizations want me to do trips for them, I outlined their trip based on the multiple times I have done the trip. The flow has to be perfect or it will collapse like a house of cards.
I have turned down groups because I knew what they wanted to do wouldn't work. And If I gave in, I would be the one with the blame. And the group would talk to others and damage my company's image.
