My 14yo grandcandy is in her third month going vegetarian...I just copied and sent this post to her for some ideas. I had also earlier mailed her three books from Amazon. This is after my recent visit and discovering she was getting all her info from YouTube videos and thought her best protein source was "eating a lot of almonds"!!!!!! Anyway, that first soup sounded delicious!

Well you certainly made a difference with your carrot harvest no rabbits in your neck of the woods. I like coconut but the price of a capped tooth is a reason not to bite into anything too crunchy. I keep meaning to get avocados I bet they would be great with piccalilli .

There are some classic Thai flavors I have not tried, like tamarind and lemongrass. Those would probably add a lot to the Thai-ishness of a soup or curry. I have recently read that the fat content of coconuts is very high, but it's like the avocado fats which are wholesome and even good for the body. So I am no longer going to buy that weak stuff, Lite Coconut Milk.

Sounds totally yum, and also very healthy. I'm gonna get some
sweet red & green peppers to dip in hummus, and maybe I'll try that soup made with coconut milk. I love Thai flavors..
