I no longer do any deep-frying - I've got some pants in my closet that I want to wear again next spring, lol. When I still did, I occasionally re-used my oil, without any apparent untoward effects. (I strained it through coffee filter paper.)

But if I did a lot of deep-frying, I would probably buy a car with a diesel engine and burn the used oil as bio-fuel...

I'd definitely use it again, blow the Health and Safety brigade! But then, I am a cheapskate whenever possible.

I saw on TV an infomercial for frying equipment that makes all that oil stuff easier.  They claim that if you use their product you can reuse the oil seven times.  I haven't tried it and probably won't.

I gave up fried foods a long time ago. It is possible to bake latkes. If there is any doubt whatsoever about the dangers of re-using oil, I would choose to throw it away.

I have reused cooking all after strainin it and keeping it well covered.
I don't fry anything now...Wiley;s heart and I have cholesterol.

My mother used to reuse cooking oil extensively when I was kid. In 1970, I "got into" natural health, health foods which was in its infancy at the time (in comparison to the current widespread acceptance). The first book I read on natural health, health foods was by the health food pioneer Adelle Davis. She had a lengthy explanation of why one should NEVER re-use cooking oil. Bottom line is that re-heated oil destroyed nutrients, introduced free radicals, caused aging and break down of tissues, was carcinogenic. (some of her theories have been supposedly 'discredited' by modern researchers but, she was the foundation on which most of the health food knowledge in the US was built). I have never ever reused cooking since reading in 1970 what Adelle Davis had to say about it. When I read your question, I did an internet search. Lots of people say that cooking oil can be reused a time or two or a few times if stringent handling techniques are followed. But, even those who say that it can be reused agree that it is harmful unless the stringent conditions are met. Personally, it is not worth it to me to take the risk. If the harm is there, it can be very harmful. Way more harmful and the few dollars that are saved. I'm sure that many will have a different opinion. I'm just sharing mine. Moon

Reusing coking oil.
Mal,
     I have used vegetable oil several times, before discarding it, with some caveates. Between uses, make certain that the oil is covered, (dust, bugs, etc.) it hasn't become scorching, smoking hot, and it hasn't been used to fry fish. I have had success prolonging the usefulness of reusing fish-fry oil once, by frying potatoes after the fish.
      It seems to remove the fishy taste, just as soaking fish fillets in milk and a dash of lemon, before cooking, (particularly if it has been frozen for a long time, and has a strong fishy aura) does.
      Waste not, want not. That poor fish gave up his life for our meal, what a shame for it to have been a waste, when you can still enjoy a tasty meal, by the proper preparation.

I have used oil again, never thought about it! I have also used cheese cloth to strain it before putting it up! I hope someone knows, though! Happy Hanukkah! sammy
