I've done this too! hate to waste good pickle juice!
My mom made delicious pickled red onions in diluted tarragon vinegar and garlic... very tasty! Fine on a burger or salad!

One of our favorites is the pickle juice of the Extra Hot Dill Pickles used for soaking packages of fresh baby carrots, frozen cauliflowerettes, garlic cloves, chunks of onion and large green olives. Let set in fridge for a couple of weeks and they are wonderful.
