The recipe made my mouth water. I had never heard of a tagine before. Not surprise since I'm not cooking much these days. I checked it out and it was very interesting. Â

I make antipasto for our family gatherings. Your recipe sounds delicious. I have never used tomato paste or eggplant in my antipasto. Mine usually contains prosciutto, salami, provolone, or mozzarella cheese, a variety of marinated veggies, fresh cherry tomatoes, and green or red onions, Italian herbs, vinegar, and olive oil. I serve it chilled, and it is good at room temperature. I posted my antipasto a few years ago on Blogit: https://www.blogit.com/Blogs/Blog.aspx/sassyass_649112/975223
