Yum! I love authentic Mexican food. Luckily, we have a few restaurants in my area that specialize in the flavors of Mexico. My favorite is enchiladas. If you get the chance, watch Pati Jinich on YouTube. She makes the best mole. Amarillito Mole with Chicken - Pati Jinich
