Onions are now off my menu, this hernia is a real pain in the middle. I never was one for lots of shallots, my fav. is red onions and i can still eat a little in a salad.

I can't imagine many dishes without onions. Huge shallots are a perk. I find that shallots are milder than the sweeter Vidalia onions, and I use Spanish white onions when making Mexican and heartier dishes. I use green onions in tuna and potato salad, and I enjoy red onions sliced thinly on sandwiches. As for mushrooms, I love them on pizza, sauteed, stuffed, and in my frittatas. My fairies and gnomes make homes out of them. 🍄
