I really enjoy beets as well. I like the red or the golden, I don't care. The red have a deeper "beet" flavor, as you suggested. The golden seem lighter to me as well. I have never had borscht, but would probably like it a lot. I love the way my mom made pickled beets, but they were more marinated than pickled. I never got the recipe and have no idea how she made them so good, slightly sweet and slightly tangy. She used vinegar, that I know. Probably sugar as well...

I like mine cooked in water and drained then soaked in vinegar and refrigerated. eat them cold with a salad. YUM!

I really like beets fixed in any way at all and so does grandson Phil.  I buy my beets fresh and begin by saving and cooking the greens of the bunch for cooking.  They are wonderful.  I always get the red beets.   I must admit, I have never put corn in with it.  LOL. I'll have to try it sometime.   I am not a recipe cook, I just make up stuff as I go along with what I have on hand.
