I have watched Pati Jinach making tamales. There is a bit of work involved with the process, but man are they delicious.

It's been a while since I thought about the Pen Women - there was a chapter at SIUE when I worked/studied there, but I was too busy with job, school, kids, etc., to get involved. I hope you're getting a lot of good out of it.
