Good Morning
Eggplant is something I've never tried in a recipe. My favorite vegetable of all time is zucchini. I could eat it every day. I like brussel sprouts but I do not like asparagus. I need to start trying new recipes. I hope you have a good day.

I love antipasto. I make mine with cured meats, cheese, olives, roasted red peppers, and a few other veggies.
