Good Morning

Ciel, thanks for sharing this post.  I've learned a few things because I never knew you could grind mushrooms.  I have a grinder for coffee but that's all I use it for and that's only if I have coffee beans.

Good afternoon

I would use the dried mushrooms in rice, pasta, soup, and sauces, or even in herbed butter spooned onto a seared steak as a booster for that desired umami flavor. I would also add vegetable, chicken stock, or wine so that the bitter taste from the shitake mushrooms doesn't take over. Porcini mushrooms are the best choice when it comes to drying them out or grinding them up.
