I eventually make soup of everything leftover.  I've already made "cream of eggplant Parmesano" for lunch today from one square of it.   It is so good.

I hope you're able to scrape out the last delicious bite - it's the

philosophy of all the best cooks: waste not, want not. I don't think I've ever tasted eggplant, but I always thought they were pretty when I saw them in the produce dept.

Good afternoon

The weather is absolutely crazy right now. My brother-in-law gave us an eggplant and a zucchini. I roasted them in the oven with garlic, herbs, olive oil, and tomatoes. It was delicious. Enjoy your day. Baking something will make the house smell good enough to eat.

Well, it is cooked so that is the main thing. Can't say that I have ever tried that dish.

I expect in the past years it was not a veggie known or grown here. It is still quite

chilly here for August. We used to say Witney Feast shut the door Sept 16.

Remember when you posted the Crowns?.
