Sassy, I use a lot of Olive Oil.  It's my favorite oil.  I've never had enchiladas believe it or not.  They sound good though.  Stay warm!

The gas prices are a major concern these days. People are feeling their wallets being pinched right now. It feels like there is no relief in sight.

Good morning

It is warm and dreary here today, which suits my mindset concerning the current conditions of the world. I believe that your cooler weather will hit us sometime tomorrow. Pork chops are one of my favorites. I usually season and coat my chops and then pan fry them in butter, but I have recently cut down on my use of butter in exchange for olive oil. We are having enchiladas today with a side of rice and refried beans.

Pat, your recipe sounds good and sour cream always makes recipes good.  Thanks for the tip on mayonnaise in cakes.  I've never tried it but I'm more than willing to put the mayonnaise in my cakes.  Did you use real mayonnaise or miracle whip?  Do you think this trick would work on different flavors of cake?

I made a batch of broccoli chicken and fettucini, using the Knorr

packaged envelope - it turned out pretty well what with my added chopped broccoli and fried chicken breasts. I think the addition of half a cup of sour cream - as called for on the package - made all the difference.  I always did add vanilla to my chocolate chip cookies, and a dollop of mayonnaise to my chocolate cakes, just to add a bit of moist creaminess. Mama taught me the mayonnaise trick.
