I use vegetable broth, and like the miso/ginger broth that Trader Joe carries. I sometimes use it to add volume to the soup when the stock is low! 

I need to go stir now...

What an interesting concept about the eggs. I had never heard of that. My mother was the one-pot wonder of soups and stews. I have no secrets that I use when making them. One thing I do that Mother did is that I use bullion. I use it at times in place of pre-made chicken stock or beef stock. I don't care for the taste of the ready-made stocks.
