Sea Gypsy, what did you put into your seasoned water? I'm so glad that the air is better. I've been worried about you! I think being able to see the blue sky and the ocean is wonderful!

Yes, the air is better where we are. Sometimes the sky is blue and a couple of times we even saw the ocean. When I made stuffed peppers I put a bit of seasoned water in the bottom of the pan and baked them foiled. It kept them moist. I know yours were delicious.

Pat_B, the hard work does pay off in tasty menus but at times I get tired. After spending so much time cutting up vegetables sometimes I have a tendency to get beside myself. I think I just get tired. This afternoon I knew I had several zucchini that needed to be peeled, sliced and frozen so I decided that it was as good a time as any so I went back to the kitchen and did all the zucchini. Now I'm happy that it's in the freezer but I'm tired this evening.

Sea Gypsy, I worry about you with all that you are dealing with! Is there any improvement in air quality by you? I'm still praying for your husband and you! The reason I make my peppers like a casserole is that everyone thinks stuffed peppers can sometimes be dry so with this recipe everything stays moist.

Sounds like a good dish. I used to make stuffed peppers. Hope your weather stays nice there. I’m glad you like Fall. This year, I can’t tell the difference. lol

Sassy, I've never made enchiladas? I wouldn't know where to start. The dinner we are having today was because of all the peppers I had. I've been cooking with peppers every day. It's a good thing we love peppers. I'm not sure when Roy will empty the rain barrel but hopefully before it freezes. I love your fairy garden. Do the kids get a lot of enjoyment out of it?

It is Tuesday, so we will be having a Mexican dish. probably enchiladas. We are still experiencing good weather here except for the mornings. It was colder than a witches tit here this morning. John will empty our rain barrel before the water has a chance to freeze, probably in November. We still have to seal the pergola and raised beds with Thompson's WaterSeal. I will probably pack up the fairy garden in late October unless the snow decides to fall earlier this year.
