I have never canned anything.  I'm afraid I will make somebody sick!  I either use frozen vegetables or vegetables from the garden.

If you boil it or nuke it you will kill any organism in the can...

Is it pickled stuff? My mom never canned a thing, or made Jelly in mason jar. She said it was too easy to get food poisoning. ? That is sll pretty though.

I have some Campbell soup dated 2005....if you cook it long enough it's ok!

Corbin, I saw your post and I have to say I've never eaten anything out of a can that has an expired date.  I just can't take the chance even though they say they are okay. I did read where the quality of the contents is not as good if the can is expired.

It really is almost too pretty to eat!  It wouldn't stop my family though.  They'd gobble it right down and if I asked them if the food in the jar was pretty they wouldn't even know what in the world I was talking about. haha
