My mom used to slice red onions and drown them in tarragon flavored vinegar--diluted to some degree!--and even after overnight, they were a wonderful crunchy garnish on a burger!
Stay dry! Are you getting one of those 'atmospheric rivers' or just the standard monsoon?

I don't think I've ever tried a pickled onion - maybe as part of chopped
relish. I'm grateful for my fleece robe these days - wouldn't do well in a nudist colony, especially in this weather.
