We use a lot of potatoes in Indian cooking. I make a dry dish and sometimes with a curry. While I was in London on a visit, I loved the jacket potatoes there.

My mom's mashed potatoes and loaded baked potatoes.

Loaded mashed potatoes.  If they are fresh from the oven, I mash the with the skins on and coarse mash.  Then I add some butter, grated cheddar cheese, finely chopped onion, bacon bits, jalapeno bits, sour cream, stir them in, put in baking dish and bake until the top is brown & crispy and sprinkle with parmesan.

Ciel - they all sound good...

I love them; baked, mashed, roasted, salad, fried, or as chips. Not a fan of fries too much, though I will on rare occasions eat them.
