Dr. Oz - or was it the cooking guru on "The Chew" suggested that

same water trick with asparagus. First chop of the bottom of the stem and then put them in water and they'll keep fresh for days... The salad sounds like a great idea.

Have always done that with my parsley and mint... and that does sound like a nice salad...Instead of the vinegar I often use some roughly chopped green Olives from a jar mixed in with my salad. and the greens don't go limp.

Beets are very special.  So is arugula.  Together they would be a definite hit.

Well NautI always buy parsley growing in a pot and then replant it in smaller sections into a large ceramic pot, or a foodsafe plastic one it then grows on for months. Salad sounds quite interesting and not too difficult for we who have not your skill.,
