This sounds like something my wife would enjoy. She loves her omelets, and usually likes various combinations of ingredients, like mushrooms, peppers, onions and the like. Oh, and cheddar cheese! There's got to be cheddar cheese! Me, I'm a bit more 'vanilla.' Just plain scrambled eggs for me, thank you very much . . .

Good thinking Naut It is surprising what one can knock up even with just a few things available. I was put off mangoes after finding a big maggot in one . I doubt it the avocados are brill here, but I must give them a try.

Avocado is scrumptious, and dang me if I didn't forget to pick up a couple
when I went to the store this a.m. I found a new way to "peel" them involving one deep cut around the whole up & down circumference, then twisting the two halves apart, scooping out the fruit with a soup spoon. Much easier than peel, peel, peeling. They're also delicious in a smoothie, make it rich and thick. I know your omelette was yummy.

I must say that I love Avocado In Australia. It is like Mango and Kiwi ffruit...the flavour is so much richer and they ripen nicely....when I go back I eat seafood and the fruit like someone just come out of a prison. LOL....
