Of course it's bad to waste food, but you did your best. My wife and I are big cheese lovers too, and don't necessarily have a favorite. However, when you do find something you really, really like, perhaps it is better that you don't have it too often. I think you'll savor it even more that way . . .

The favorite cheese of Son #1 is Vermont White Sharp Cheddar. Maybe that's why his nose runs so much.

No..oh no not cheese. I love a good cheddar cheese...and cheese and apple, yes a definite TV watching nibble in North Camelot. Oh I am so sorry.

Now you have put me longing for that home made cheese, squeezed through a bit of linen and dosed with pepper and a pinch of salt . Somehow I don't think the milk would be creamy enough now, or we might be afraid to use it if was going off.

Chunks of sharp, white cheddar? With slices of Granny Smith apples and a few small sips of brandy?
Near-heavenly (or at least near-paradisical fare, what with the apple and all that, LOL), and I'm very sorry you're no longer able to enjoy it! I am fortunate in not suffering from that allergy (or any others, for that matter), and I shall send you some friendly vibes the next time I'll indulge, which will probably be tonight...

I gave up dairy a while back...
Seems to me, I have fewer hot flashes since quitting the cheese. Now, other parts of me also react badly to any dairy. Almond milk for me, and no cheese... sigh.
