That reminds me - I don't get Emeril any longer, but I do remember his 'essence' and always thought I should send away for some, but always forgot, LOL. Let us know what you think of it...

Like everything else about the internet, Google has changed and I can't seem to search YouTube anymore.  They want me to join again and pay money.  Don't want it that badly.

Emeril's Essence is a jar of Cajun spices that you can buy at the market.  But, on the Internet you can find a recipe to make your own.  I made my own, but it is lacking one ingredient that son does not like the taste of, so I just leave it out:

  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme (I leave this out)
  •  2 1/2 tablespoons paprika

     In a small bowl combine all the ingredients thoroughly. Store in an airtight container.

Well, to each his own, I guess. Remember, I married a vegetarian, so such dishes would be out of the question here! Artichoke jelly? Yuck! However, with that cornbread baking, I'll bet the house will smell nice! See ya in the Spring . . .

Taps someone gave me a part of a pigs leg, I had it in the freezer for two years and in the end I buried it by a rose tree. I hope I don't get any big chunks given to me again.
