Yes - that's how my grandma cooked her pumpkin and squash that she would prepare for Thanksgiving pies. I want to do the same - do you have any notion of how long it will stay good when frozen, TAPS? I'm thinking it will be much cheaper than buying cans for the dogs.

I love roast pumpkin...Wiley doesn't like it but I cover it with other vegetables and he has eaten it before he realizes.

Yesterday at the grocery store I saw a pumpkin pie kit...
two small sugar pumpkins--those dark orange ones--in a plastic bag with some other stuff.

It sounds good to me.
Funny thing, I went to a lot of trouble to bake pumpkin pies for every Thanksgiving and Christmas, because my kids loved them so much. I'd have been happy with just the old fashioned pecan pie. And then a couple years ago a few days apart, two of my kids said they really didn't like pumpkin and only ate it because it made me so happy. And now it turns out to be really really healthy and nutritious.
