Believe it or not, but I eat raw baby carrots every day! They're always a part of my mid-day snack. However, your caramelized version sounds wonderful! And as far as omelettes are concerned, I don't think there's a right way or a wrong way to prepare them regarding the various ingredients you can put in them! As long as you start with eggs of course . . .

My mother used to think carrots were good at fighting cancer.
She said they had a lot of beta carotene, and that most diets were deficient in fresh veggies, especially carrots. She was also a big believer in cod liver oil, a big spoon full every day to fend off colds.

Oh dear Naut you really should grow your own I grow them early in pots and we have them finger size a lady's finger to boot, pulled fresh and simmered they are almost transparent dipped in butter. As you probably know we were told to eat carrots during the war evidently it helped one see in the dark. Sadly it was a rumour spread to hide the facts that the air-force lads could see so well at night, the secret was Radar of course.

I could get my teeth into that!
Fair exchange: my mom's best carrot recipe requires steaming the carrots, small ones or cut into smallish pieces, as back when, they didn't offer those bags of little peeled carrots. Then she would glaze them with butter and ginger--and that was that.
