No sauerkraut in it. It is mashed potatoes, cooked cabbage or kale, and little green onions. Cook the green things together until tender and then add them to creamy mashed potatoes.

Sounds good to me as well. I'm part Irish ( on my mother's side ) but have never heard of Colcannon before. Just one question . . . do I have to sing while I'm eating?
